Unique to Australia is our Taboon, an ancient stone oven which makes the food of our Middle Eastern café distinctive.

The Taboon oven is used to bake flatbreads & gourmet pizzas, flame-grill our kebabs and is the heart of our café and soul of this fresh cooking style.

The Moroccan Tagine

Taboon Tagines are made in the authentic manner. Many restaurants simply cook a stew in a pot and serve it in the ornamental tagine. However the serving dish, whilst very exotic and attractive, does not create the wonderful moist succulent result and melding of flavours of the cooking tagine. At Taboon we use the residual heat of our stone oven to slow-cook our tagines overnight in the traditional clay cooking tagine. The combination of the stone oven and clay tagine produces food as it used to be, warming earthy and wholesome. We are creating modern versions of classic Moroccan recipes, using unique spice blends such as Ras el Hanout, Baharat and Chermoula and combining them with quality Australian meat, dried fruits and vegetables. The results speak for themselves and bring a little bit of Morocco and the flavour of North Africa to Robina on the Gold Coast.

Our Pita Bread

Pita bread has been made for thousands of years and has been part of the staple diet of people in many parts of the world.It is made from the basic ingredients of quality white and wholemeal flour, yeast, salt, olive oil and water and this is what makes it so healthy and full of flavour.The fermentation process causes the bread to puff up like a balloon on baking, creating the world-famous “pocket” which makes Pita so versatile.

Our Taboon Pita bread is made in the authentic and traditional way, does not contain dairy products, and consists of the highest quality natural ingredients.It does not contain any artificial additives, preservatives or colouring and is 99% fat free. Why not try our Baghdad PitaSandwich with lamb, hummus, freshly chopped tabouleh and fried eggplant which is filling, healthy and most importantly, very tasty. Alternatively, you can dip Taboon pita into Hummus with Spiced Lamb or Persian Eggplant or enjoy it with our already famous Moroccan Salad.

 

Middle Eastern Pizzas

A pizza that keeps people talking is a pizza born out of a concept. Here at Taboon the concept is both simple and unique: A Taboon stone-hearth oven can also cook gourmet Middle - Eastern pizzas. We use fresh and healthy ingredients, the toppings arecreative without all that melted cheese and it is made to order. Our daily hand baked dough that is thin and crunchy is topped with our spicy tomato sauce and finished with interesting and surprising combinations. Then the pizza is baked on the stone floor of the Taboon oven to provide that special taste. Enjoy!! Eat in or Take – Away!
