Middle Eastern food is a fashion that goes back hundreds of years and many of the foods that we eat today originated in this part of the world. The region encompasses areas from North Africa with Morocco, Tunisia & Egypt through to Turkey in the north then moving south through countries such as Lebanon, Israel, Iran, Saudi Arabia & Yemen.

The Cuisine of these countries is as diverse as their history and has been affected by political upheaval, movements of people, trade and natural resources. Each country, region , city, village & household have their own repertoire of home cooking and apart from Turkey & Lebanon, where a restaurant trade began about 80 years ago, there has not been a restaurant trade in the Middle East until the modern era. Eating houses evolved from street food – a few chairs placed beside a movable stall and today’s standard menus of appetisers, skewered meats grilled over embers with breads and rice belong to the street tradition.

Today the cuisines of the Middle East have been well documented and Australian chefs have adopted what they call eastern – Mediterranean cuisines with aromatic spices, couscous, chick peas, tagines, pilafs and the like appearing on the menus of fashionable eclectic restaurants.

Taboon has a uniquely Australian way of bringing Middle Eastern food to modern cafe society. Our cuisine is based on traditional recipes from countries such as Egypt, Lebanon, Israel, Morocco, and Turkey.

These recipes, many of which are passed down from mothers and grandmothers, are re-invented by using quality local ingredients and presented in a modern style. The result is simple, tasty food in which the exotic spices and warm flavours of this region simply shine through.
