Quick & Easy Hummus
Serves 6
Ingredients
2 x 400g tins chickpeas
1/2 teaspoon bicarbonate of soda
1 cup tahina
30ml lemon juice
25g crushed garlic
1/3 table spoon ground cumin
1/4 teaspoon Chilli Powder (optional)
100ml olive oil
1 level table spoon salt
Method
Drain chickpeas in colander and rinse thoroughly with cold running water. Transfer chickpeas to pot, cover with water, add bicarbonate of soda and bring to boil. Cover and simmer for minimum 1 hour. Drain off liquid from the chickpeas leaving the water level in pot at about 3/4 the level of the chickpeas, reserving the liquid. Add all ingredients, and blend in pot with stick blender whilst still hot – adding the reserved chickpea liquid a little at a time. Blend thoroughly bringing to a smooth consistency of a thick puree soup that can be poured. Remember that the hummus will become much thicker when cooled. Check for taste (lemon, salt & garlic) and store covered in refrigerator.
